As a Chesapeake Bay native, he combines simple, straightforward ingredients with fresh seafood shipped in twice a week. This halibut dish is the Chef’s Recommendation for July, and because Chef Owen insists on keeping fish the centerpiece, you can be assured a light, healthy meal that leaves you hearing ocean waves in the background.

The chicken fried steak at Green Chile Willy’s is a trademark dish of the Amarillo area tradition. The secret is in careful preparation.
